Abstract | : | カタラーゼ, パーオキシダーゼおよびポリフエノールオキシダーゼのいずれも低温貯蔵(5℃)に比較して高温貯蔵(25℃)の活性が2∿3倍高かった。また活性のピークはカタラーゼが24時間後, パーオキシダーゼおよびポリフエノールオキシダーゼはそれぞれ96および48時間後に見られた。 The activities of catalase, peroxidase and polyphenoloxidase in tea leaves increased in the lapse of storage, and these activities reached to the maximum values after 1 to 3 days' storage. These enzymes, which were stored at 25℃, showed higher activities than those stored at 5 and 15℃. |
